- 300g pasta
- 150g fresh mozzarella
- 4 tablespoons basil pesto
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 30g Parmesan cheese
- Salt and pepper to taste
- Cherry tomatoes
- Fresh basil leaves
Instructions
- Cook pasta in salted boiling water until al dente.
- Reserve 1/2 cup pasta water and drain.
- Heat olive oil and sauté garlic.
- Add pasta and pesto, mix well.
- Add pasta water to loosen sauce.
- Stir in mozzarella and Parmesan.
- Season with salt and pepper.
- Garnish with basil and serve.
Notes
Use fresh mozzarella for best results. Add grilled chicken or vegetables for variation. Store leftovers in fridge up to 2 days.
