Packed with toasted pecans for the perfect earthy crunch and a balanced sweetness, this recipe guarantees a professional-grade result every time. It is a foolproof method that produces a custard-like center which slices beautifully, making it the perfect centerpiece for your Thanksgiving or family celebration.
Ingredients
2 cups pecan halves
1 cup light corn syrup
1 cup granulated sugar
3 large eggs, at room temperature
4 tablespoons unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1 deep-dish pie shell, unbaked
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Toast the pecan halves on a baking sheet for 5 minutes to release their natural oils.
In a large bowl, whisk the eggs until they are frothy.
Add the corn syrup, sugar, melted butter, vanilla, and salt to the eggs and stir until well combined.
Arrange the toasted pecans evenly across the bottom of the unbaked pie crust.
Pour the egg and sugar mixture carefully over the pecans.
Place the pie on the center rack of the oven.
Bake for 60 minutes or until the filling is set but still slightly jiggly in the very center.
Remove from the oven and allow to cool completely on a wire rack before slicing to ensure the custard sets properly.
Notes
To toast pecans quickly, place them in a single layer on a sheet pan for 5 minutes; watch carefully to prevent burning. Ensure eggs are at room temperature to prevent the melted butter from solidifying upon contact. For a deeper flavor, you can substitute the granulated sugar with light brown sugar. Always let the pie cool for at least two hours before serving for the best texture.
