Ingredients
1 cup canned pumpkin puree
2 cups all-purpose flour
1 cup brown sugar, packed
1/2 cup unsalted butter, melted and slightly cooled
1 large egg, room temperature
1 teaspoon pure vanilla extract
2 teaspoons pumpkin pie spice
1.5 cups semi-sweet or dark chocolate chips
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Line a 9×9 inch square baking pan with parchment paper.
Whisk the melted butter and brown sugar together in a large bowl until smooth.
Add the egg, vanilla extract, and pumpkin puree to the mixture.
Stir until the wet ingredients are fully incorporated and uniform.
Fold in the flour and pumpkin pie spice until just combined.
Stir in the chocolate chips.
Spread the batter evenly into the prepared baking pan.
Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool completely before slicing into 16 bars.
Notes
Ensure you use pure canned pumpkin and not pumpkin pie filling which contains extra sugar and additives. For the best texture, let the bars rest for several hours before serving to allow the spices to bloom and moisture to distribute evenly.
