Description

Indulge in these soft, brioche-style pumpkin cinnamon rolls. Infused with real pumpkin puree and a fragrant blend of autumn spices, these rolls feature a gooey brown sugar filling and a pillowy texture. Perfect for crisp autumn mornings or a festive holiday brunch, this recipe ensures bakery-quality results right from your own oven. The pumpkin adds natural moisture and a beautiful golden color, making these a truly essential seasonal treat that everyone will love.

Ingredients

Scale

1/2 cup canned pumpkin puree
4 cups all-purpose flour
1 cup brown sugar
2 1/4 tsp active dry yeast
6 tbsp unsalted butter, softened
2 tbsp ground cinnamon
1/2 cup warm milk (110°F)
1 tsp salt
1/4 cup granulated sugar
1 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves

Instructions

Warm the milk to 110°F and whisk in the yeast; let sit for five minutes until foamy.
Combine pumpkin puree, melted butter, granulated sugar, and salt in a large mixing bowl.
Gradually add flour and spices to the wet ingredients until a dough forms.
Knead on a floured surface for eight minutes until smooth and elastic.
Place dough in a greased bowl, cover with a warm cloth, and let rise for 90 minutes.
Roll the proofed dough into a 12×18 inch rectangle.
Spread softened butter across the dough and sprinkle evenly with the brown sugar and cinnamon mixture.
Roll the dough tightly into a log and cut into 12 even rolls.
Place rolls in a baking pan, cover, and let rise for an additional 30 minutes.
Preheat oven to 375°F and bake for 25 minutes until golden brown.

Notes

Ensure you use plain pumpkin puree, not pumpkin pie mix which contains additional sugars and spices. For the best rise, place the bowl in a draft-free spot. Leftover rolls can be stored in an airtight container for up to 3 days.
