1 cup canned pumpkin puree
8 oz cream cheese, softened
2 cups all-purpose flour
3/4 cup packed brown sugar
1/2 cup vegetable oil
2 large eggs
1 large egg yolk
2 tsp pumpkin spice
1 tsp baking soda
1/4 cup granulated sugar (for cream cheese mixture)
1/2 tsp salt


Instructions

Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together flour, baking soda, salt, and pumpkin spice.
In a separate bowl, combine pumpkin puree, vegetable oil, brown sugar, and 2 large eggs until smooth.
Fold the wet pumpkin mixture into the dry flour mixture until just combined.
In a small bowl, beat the softened cream cheese with granulated sugar and the egg yolk until smooth.
Fill muffin cups 1/3 full with pumpkin batter, add a spoonful of cream cheese, and top with remaining batter.
Use a toothpick to gently swirl the cream cheese into the batter.
Bake for 20-25 minutes or until a toothpick inserted into the muffin center comes out clean.
