8 oz cream cheese, softened
2 cups all-purpose flour
1.5 cups granulated sugar
1/2 cup vegetable oil
2 large eggs, room temperature
1/4 cup sour cream
1 tsp baking soda
2 tsp pumpkin pie spice
1 tbsp all-purpose flour (for filling)
1/4 cup granulated sugar (for filling)


Instructions

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a small bowl, beat the softened cream cheese with 1/4 cup sugar and 1 tablespoon flour until smooth; transfer to a piping bag and chill for 15 minutes.
In a medium bowl, whisk together the flour, baking soda, and pumpkin pie spice.
In a separate large bowl, whisk the pumpkin puree, vegetable oil, 1.5 cups sugar, sour cream, and eggs until fully combined.
Slowly fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
Fill each muffin cup halfway with the pumpkin batter.
Pipe a small amount of the chilled cream cheese mixture into the center of each muffin.
Top with remaining pumpkin batter and use a toothpick to gently swirl the cream cheese into the top.
Bake for 22 minutes or until a toothpick inserted into the cake portion comes out clean.
Cool in the tin for 5 minutes before moving to a wire rack to cool completely.
