Ingredients
- 1 large romaine lettuce, chopped
- 1 cucumber, sliced
- 2 cups cherry tomatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small red onion, thinly sliced
- 1 avocado, diced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Wash and dry all vegetables thoroughly.
- Chop the romaine lettuce and place it into a large salad bowl.
- Slice the cucumber, peppers, tomatoes, and onion.
- Soak the sliced onion in cold water for 10 minutes, then drain and pat dry.
- Whisk together olive oil, lemon juice, red wine vinegar, honey, garlic, salt, and black pepper in a small bowl.
- Add cucumber, tomatoes, peppers, onion, avocado, feta cheese, parsley, and mint to the bowl.
- Pour the dressing over the salad.
- Toss gently until evenly coated.
- Serve immediately or chill for 15 minutes before serving.
