Description

This Rice Pilaf with Herbs is light, fluffy, and full of fresh, aromatic flavors. Made with buttery toasted rice, fragrant garlic, and a blend of fresh herbs, it’s the perfect comforting side dish for any meal.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped (optional)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the rice until the water runs clear and drain well.
  2. Heat butter and olive oil in a saucepan over medium heat.
  3. Add onion and cook until soft and translucent.
  4. Stir in garlic and cook until fragrant.
  5. Add rice and toast for 2–3 minutes.
  6. Pour in broth and add salt and pepper.
  7. Bring to a boil, then reduce heat and cover.
  8. Simmer for 15–18 minutes until liquid is absorbed.
  9. Remove from heat and let sit for 5 minutes.
  10. Fluff rice and stir in herbs and lemon juice.

Notes

Use fresh herbs for the best flavor. You can substitute parsley with cilantro or add thyme for variation. Store leftovers in the fridge for up to 3 days and reheat with a splash of water to keep it moist.
