- 1 cup long-grain white rice
- 2 tablespoons butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1/2 cup raisins
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon turmeric
- 2 tablespoons fresh parsley, chopped
Instructions
- Melt butter in a saucepan over medium heat.
- Add chopped onion and cook until soft and golden.
- Stir in garlic and cook for 30 seconds.
- Add rice and toast for 2–3 minutes.
- Pour in broth and add spices.
- Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add raisins and cook for another 5 minutes.
- Remove from heat and let rest for 5 minutes.
- Fluff with a fork and garnish with parsley before serving.
Notes
Soak raisins in warm water for 10 minutes before using for extra softness. You can add toasted almonds or pine nuts for crunch. Store leftovers in the fridge for up to 3 days and reheat with a splash of water.
