Description

This Rice Pilaf with Vegetables is a comforting, flavorful dish made with fluffy long-grain rice, colorful vegetables, and aromatic spices. Perfect as a side or a light main meal, it’s easy to prepare and packed with wholesome goodness.


Ingredients

  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1/2 cup green peas
  • 1/2 cup diced bell peppers
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon turmeric
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Sauté the chopped onion until soft and translucent.
  3. Add minced garlic and cook for 30 seconds.
  4. Stir in carrots and bell peppers, cooking until slightly tender.
  5. Add peas and mix well.
  6. Stir in rinsed rice and toast for 1 minute.
  7. Pour in vegetable broth and add spices.
  8. Bring to a boil, then reduce heat and cover.
  9. Simmer for 15–18 minutes until rice is cooked.
  10. Let rest, fluff with a fork, and garnish with parsley.

Notes

Rinse rice thoroughly for best texture. Substitute vegetables based on availability. Add a squeeze of lemon juice for extra freshness. Store leftovers in the fridge for up to 3 days.
