- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1/2 cup green peas
- 1/2 cup diced bell peppers
- 2 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon turmeric
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a saucepan over medium heat.
- Sauté the chopped onion until soft and translucent.
- Add minced garlic and cook for 30 seconds.
- Stir in carrots and bell peppers, cooking until slightly tender.
- Add peas and mix well.
- Stir in rinsed rice and toast for 1 minute.
- Pour in vegetable broth and add spices.
- Bring to a boil, then reduce heat and cover.
- Simmer for 15–18 minutes until rice is cooked.
- Let rest, fluff with a fork, and garnish with parsley.
Notes
