1.5 lbs chicken breast, sliced into thin cutlets
12 oz penne or rigatoni pasta
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1/2 cup parmesan cheese, freshly grated
4 garlic cloves, minced
1/2 cup chicken broth
1 tsp dried oregano
1/4 tsp red pepper flakes
2 tbsp olive oil
Salt and black pepper to taste


Instructions

Drain the pasta, reserving 1/2 cup of the starchy cooking water.
Season chicken cutlets with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.

In the same skillet, add minced garlic, dried oregano, and red pepper flakes, sautéing until fragrant.
Stir in the sun-dried tomatoes and chicken broth, simmering for 2 minutes.
Lower the heat and stir in the heavy cream and parmesan cheese until smooth.
Add the cooked pasta and sliced chicken back into the skillet.
Toss to coat, adding reserved pasta water if needed to reach desired sauce consistency.
