This restaurant-quality side dish balances crispy, golden-brown edges with a tender, moist interior, ensuring a flavorful foundation for any special meal. By using fresh sage, rosemary, and thyme, this stuffing delivers a sophisticated, botanical depth that pairs perfectly with roasted poultry. It is a hearty and reliable recipe designed for both casual family dinners and elegant holiday gatherings, guaranteed to be a crowd-pleaser.

Ingredients

Scale

1 lb poultry sausage, casing removed
1 loaf French bread, cubed and dried overnight
1 large yellow onion, finely diced
3 stalks celery, thinly sliced
2 tbsp fresh sage, finely minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, leaves only
2 cups vegetable broth
4 tbsp unsalted butter, melted

Instructions

Preheat your oven to 375 degrees Fahrenheit and grease a large baking dish with non-stick spray.
Brown the poultry sausage in a large skillet over medium-high heat until fully cooked through and crumbled.
Remove the sausage from the skillet and set it aside, keeping the rendered fat in the pan.
Sauté the onion and celery in the remaining fat until soft and translucent.
Add the fresh sage, rosemary, and thyme to the vegetable mixture and stir for one minute until fragrant.
Combine the toasted bread cubes, cooked sausage, and sautéed vegetable-herb mixture in a large mixing bowl.
Drizzle with the melted butter and pour the vegetable broth over the mixture, tossing gently until evenly moistened.
Transfer the mixture to the prepared baking dish.
Bake for 30-35 minutes until the top is golden brown and the center is set.

Notes

Ensure the bread is truly dry or toasted to prevent the stuffing from becoming mushy. If the top browns too quickly, tent with foil during the last 10 minutes of baking. Store leftovers in an airtight container in the refrigerator for up to three days.
