1.5 lbs Yukon Gold Potatoes, chopped
2 cups Low-sodium Beef Broth
1 large Onion, roughly chopped
4 cloves Garlic, minced
2 tbsp Tomato Paste
1 tsp Dried Thyme
1 tbsp Oil for searing
Kosher salt and cracked black pepper to taste


Instructions

Pat the beef dry with paper towels and season generously with salt and pepper on all sides.
Heat oil in a heavy-bottomed skillet over medium-high heat and sear the beef for 4 minutes per side until deeply browned.
