Ingredients
3 lbs beef chuck roast
1 large yellow onion, sliced
4 cloves garlic, minced
1/2 cup apple cider vinegar
2 tbsp smoked paprika
1/4 cup brown sugar
1 tsp salt
Instructions
Combine the spices, brown sugar, and salt in a small mixing bowl.
Rub the spice mixture thoroughly over all sides of the beef roast.
Place the sliced onions at the bottom of the slow cooker to create a flavor bed.
Set the beef roast on top of the onions.
Pour the apple cider vinegar around the base of the meat.
Cover the lid tightly and set the slow cooker to low for eight hours.
Remove the meat from the slow cooker once tender.
Shred the meat using two sturdy forks on a large cutting board.
Return the shredded meat to the juices to soak for ten minutes.
Notes
For even deeper flavor, sear the beef in a hot skillet until browned on all sides before placing it into the slow cooker. You can substitute the beef with young green jackfruit for a delicious plant-based version.
