Description

Ingredients
2 lbs boneless skinless chicken breasts
1 tbsp chili powder
1 tbsp ground cumin
1 tsp cumin
4 garlic cloves
1/4 cup cilantro
1 cup chicken broth
1 large lime
1 medium onion
1 tsp salt
Instructions
Pat chicken dry and season with salt and black pepper
Sear in cast iron skillet until golden browned (3-4 minutes per side)
Transfer chicken to slow cooker and add chopped onion
Dissolve chili powder and cumin in chicken broth
Pour mixture around chicken in cooker
Crush garlic cloves under liquid
Set slow cooker to low and cook 6-7 hours
Shred chicken with a fork when tender
