- 100 g granulated sugar
- 1 large egg white
- 1 teaspoon vanilla extract
- 120 g pine nuts
- Zest of 1 lemon
- Pinch of salt
- Powdered sugar for dusting
Instructions
- Preheat oven to 170°C (340°F) and line a baking tray.
- Break almond paste into a bowl and soften it.
- Add sugar, egg white, vanilla, lemon zest, and salt. Mix well.
- Chill the dough for 20 minutes.
- Shape dough into small balls.
- Roll each ball in pine nuts and press gently.
- Place on tray with spacing.
- Bake for 15–18 minutes until golden.
- Cool and dust with powdered sugar.
Notes
Use fresh pine nuts for best flavor. Chill dough for easier shaping. Avoid overbaking to keep cookies soft. Store in airtight container up to 5 days or freeze for longer storage.
