Description

A creamy, no-bake Southern dessert with layers of ripe bananas, homemade vanilla pudding, and crushed vanilla wafers. Comforting and nostalgic, it balances soft, crisp, and sweet textures in every bite.

Ingredients

Vanilla Wafers, 25 pieces
Large Bananas, 3 (ripe with brown speckles)
Evaporated Milk, 1 can (12 oz)
Cornstarch, 3 tbsp
Sugar, 1/2 cup
Baby Ruth Bars, 6 (optional, for chocolate layer)

Instructions

Peel and slice 3 large bananas into ½-inch rounds. Place first layer in a 9×13-inch dish.
In a saucepan, whisk together cornstarch, sugar, and evaporated milk.
Cook over medium heat, stirring constantly, until the mixture thickens.
Pour half the pudding over the banana layer, then sprinkle crushed vanilla wafers.
Repeat with remaining ingredients, finishing with a top banana layer.
Chill for 2 hours before serving.

Notes

Use room-temperature ingredients for smoother emulsification.
Chill pudding to thicken further and let flavors meld.
Toast vanilla wafers lightly for extra crunch.
Substitute cornstarch with 2 tbsp arrowroot powder.
Avoid overcooking to prevent rubbery texture.
Use overripe bananas for intense sweetness.
