Description

This classic Southern Sweet Potato Casserole is a holiday favorite that perfectly bridges the gap between a side dish and a decadent dessert. By roasting the sweet potatoes rather than boiling them, we concentrate their natural sugars for a deeper, earthier flavor. The velvety smooth potato base is finished with a crunchy, buttery pecan and brown sugar streusel that provides a golden contrast in every comforting bite.

Ingredients

Scale

4 lbs Sweet Potatoes (Garnet or Jewel variety)
1/2 cup Unsalted butter, melted
1/2 cup Brown sugar, packed
1 cup Pecans, chopped coarsely
1/3 cup All-purpose flour
1 tsp Pure vanilla extract

Instructions

Preheat your oven to 400 degrees Fahrenheit for roasting the potatoes.
Wash the potatoes thoroughly, pierce them with a fork, and roast on a baking sheet for 60 minutes or until soft.
Let potatoes cool, then peel and mash the flesh in a large bowl.
Stir half the melted butter, a portion of the sugar, and the vanilla extract into the mashed potatoes.
Spread the potato mixture into a baking dish.
In a separate bowl, mix the pecans, flour, remaining sugar, and remaining butter.
Sprinkle the pecan topping evenly over the mashed potatoes.
Bake at 350 degrees Fahrenheit for 25 minutes until the topping is golden brown.

Notes

Roast the potatoes whole in their skins to retain maximum flavor and moisture. You can prepare the base a day in advance and add the topping just before the final bake for the best crunch.
