Ingredients
2 cups all-purpose flour
15 oz pumpkin puree (not pie filling)
1.5 cups granulated sugar
0.5 cup vegetable oil
2 large eggs
2 tsp ground cinnamon

0.5 cup all-purpose flour (for topping)
0.33 cup brown sugar (for topping)
4 tbsp cold unsalted butter (for topping)
Instructions
Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
Prepare topping by mixing 0.5 cup flour, brown sugar, and cold butter until coarse crumbs form. Keep refrigerated.
In a large bowl, whisk together 2 cups flour, granulated sugar, baking soda, salt, and spices.
In a separate bowl, blend pumpkin puree, oil, and eggs.
Gradually fold the wet ingredients into the dry mixture until just combined, stirring in walnuts if desired.
Pour batter into the prepared pan and sprinkle the chilled streusel topping evenly over the top.
