Description

12 full sheets graham crackers, crushed into fine crumbs
1/2 cup unsalted butter, melted
16 ounces cream cheese, softened to room temperature
1 cup 100% pure pumpkin puree
3/4 cup granulated sugar, divided
3 large eggs, room temperature
2 teaspoons pumpkin spice
1 teaspoon pure vanilla extract


Instructions

Preheat oven to 350 degrees Fahrenheit and line a 9×9 inch baking pan with parchment paper.
Combine crushed graham cracker crumbs and melted butter in a bowl, then press firmly into the pan.
Bake the crust for 10 minutes and let cool slightly.
Beat the softened cream cheese and half the sugar until smooth.
Add two eggs and vanilla extract to the cream cheese mixture and beat until well combined.
In a separate bowl, mix pumpkin puree, the remaining sugar, one egg, and pumpkin spice.
Pour two-thirds of the cheesecake batter over the crust.
Drop spoonfuls of the pumpkin mixture over the cheesecake layer, then dollop the remaining cheesecake batter on top.
Use a knife to gently swirl the mixtures together to create a marbled effect.
Bake for 35 minutes or until the center is set.
Allow to cool completely before cutting into 16 bars.
