Description

A bold and flavorful casserole that combines golden, roasted tater tots with seasoned ground beef, beans, and cheese. Perfect for a quick weeknight meal with Mexican-American flair.


Ingredients

16 oz tater tots (refrigerated or frozen)
1 lb ground beef (or ground turkey)
2 Tbsp taco seasoning
1 can (15 oz) kidney beans, rinsed (or pinto beans)
1 can (15 oz) tomato sauce (or fire-roasted diced tomatoes)
2 Tbsp olive oil (or avocado oil)
1 cup cheese (herbed feta or vegan cheese)
8 oz tortillas
1 tsp parmesan
Fresh cilantro, torn
Lime wedges for garnish


Instructions

Preheat oven to 425°F.
Spread tater tots in a single layer on a parchment paper-lined baking sheet.
Pat tots dry with paper towels, then toss with 1 Tbsp oil and 1 tsp parmesan.
Roast for 15-18 minutes until golden and crispy.
In a skillet, brown the beef with 2 Tbsp water until cooked through.
Add taco seasoning, drained beans, and tomato sauce. Cook and stir for 5 minutes.
Spread the hot beef mixture over the roasted tater tot layer.
Tear the tortillas into pieces and scatter them over the meat layer.
Top with torn fresh cilantro leaves and crumbled cheese.
Bake uncovered for 25 minutes until bubbly and the edges are browned.
Cool for 5 minutes before serving, and garnish with lime wedges.

Notes

Tater tots freeze well if prepped in advance.
For a spicier kick, add diced jalapeños or a pinch of cayenne.
Leftovers can be stored in the refrigerator for up to 3 days.
