1.5 lbs boneless, skinless chicken breast, sliced into cutlets
1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
3 cups fresh spinach, stems removed
1 cup heavy cream
4 cloves garlic, minced finely
1/2 cup low-sodium chicken broth
1/2 cup parmesan cheese, freshly grated
2 tbsp extra virgin olive oil
Salt, pepper, and dried oregano to taste


Instructions

Heat olive oil in a large skillet over medium-high heat.
Season chicken cutlets with salt, pepper, and dried oregano.
Place chicken into the hot skillet and cook for 5-6 minutes per side until golden brown and cooked through.
Remove the chicken from the skillet and set aside on a plate.
Add minced garlic to the same skillet and cook for one minute until fragrant.
Pour in chicken broth to deglaze the pan, using a spatula to scrape up the browned bits.
Stir in sun-dried tomatoes and cook for two minutes.
Reduce heat to low and pour in the heavy cream.
Whisk in the parmesan cheese until the sauce thickens slightly.
Add the spinach to the sauce and stir until wilted.
Return the chicken to the skillet, coating it thoroughly with the sauce before serving.

Notes

Ensure you use low-sodium chicken broth to control the saltiness of the sauce. For a dairy-free variation, coconut cream can be substituted for heavy cream. Serve immediately over pasta, crusty bread, or mashed potatoes to soak up the extra sauce.
