Ingredients
1 lb Ground Chicken
1/2 cup Sun-dried Tomatoes, chopped
2 cups Fresh Spinach, chopped
3 cloves Garlic, minced
1/2 cup Panko Breadcrumbs
1 cup Low-sodium Chicken Broth
1/2 cup Heavy Cream
2 tbsp Olive Oil
Salt and black pepper to taste
Instructions
In a large bowl, combine ground chicken, breadcrumbs, half of the minced garlic, sun-dried tomatoes, and seasonings.
Shape the mixture into uniform meatballs.
Heat olive oil in a large skillet over medium-high heat.
Sear the meatballs until golden brown on all sides and remove from the pan.
In the same skillet, sauté the remaining garlic and spinach until wilted.
Deglaze the pan with chicken broth, scraping up the browned bits.
Stir in the heavy cream and bring to a gentle simmer.
Return the meatballs to the skillet and cook until they are fully cooked through.
Notes
Chill the chicken mixture for 15 minutes before shaping to make the meatballs easier to handle. You can use half-and-half instead of heavy cream for a lighter sauce consistency.
