Ingredients
4 large chicken breasts, boneless and skinless
1.5 cups heavy cream
1/2 cup sun-dried tomatoes in oil, chopped
3 cups fresh spinach, packed
4 cloves garlic, minced
1/2 cup low-sodium chicken broth
1/2 cup parmesan cheese, freshly grated
2 tbsp extra virgin olive oil
Salt, pepper, and dried oregano to taste
Instructions
Season chicken breasts liberally with salt, pepper, and dried oregano.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear chicken for 5 to 7 minutes per side until golden brown and cooked through; remove and set aside.
In the same skillet, sauté minced garlic for 1 minute until fragrant.
Add sun-dried tomatoes and cook for 2 minutes to release oils.
Pour in chicken broth and scrape the bottom of the pan to deglaze.
Whisk in heavy cream and bring the mixture to a gentle simmer.
Stir in parmesan cheese until the sauce thickens slightly.
Add fresh spinach and cook until wilted.
Return chicken to the skillet, coating each piece thoroughly with the sauce before serving.
Notes
Use half-and-half for a lighter sauce consistency if preferred. Ensure you scrape the brown bits (fond) from the bottom of the skillet as they add significant depth to the sauce. Serve over pasta, rice, or with crusty bread.
