Ingredients
Ground beef, 1 lb (90% lean or ground turkey)
Dried long-grain or jasmine rice, 1 cup
Diced tomatoes, 1 cup (BPA-free canned)
Canned black beans, 1 cup
Extra-thick or hardshell tortillas, 6
Shredded cheese, 2 cups
Chili powder, 1 tbsp
Cumin, 1 tsp
Tomato sauce, 2 tbsp
Olive oil spray
Instructions
Preheat oven to 375°F. Cook rice per package instructions.
Brown ground beef in a skillet, drain fat. Add diced tomatoes, chili powder, and cumin. Simmer 5 minutes.
On each tortilla, layer 1/6 of rice, beef mixture, and black beans. Repeat layers (4 tortillas), ensuring stability.
Top two stacked assemblies with cheese and a thin layer of tomato sauce. Bake 20–25 minutes until bubbly and golden.
Transfer casserole to a serving dish and let rest 5 minutes before slicing.
Serve in individual portions or as a shared dish.

Use day-old tortillas for sturdier layers.
