- 1 pre-made pie crust
- 2 medium zucchinis, sliced
- 1 small onion, chopped
- 3 large eggs
- 1 cup heavy cream
- 1 cup shredded cheese
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tsp dried herbs
Instructions
- Preheat oven to 180°C (350°F).
- Sauté onion in olive oil until soft.
- Add zucchini and cook until tender.
- Season vegetables and let cool.
- Whisk eggs and cream together.
- Stir in cheese.
- Place crust in baking dish.
- Add zucchini mixture.
- Pour egg mixture on top.
- Bake for 35–40 minutes until set.
- Cool slightly before serving.
Notes
Sauté zucchini to remove excess moisture. You can substitute cream with milk for a lighter version. Store leftovers in the fridge for up to 3 days and reheat in the oven.
