Description

This zucchini quiche is a creamy, savory dish made with fresh zucchini, eggs, and cheese baked in a flaky crust. Perfect for brunch, lunch, or a light dinner, it’s simple, comforting, and full of homemade flavor.


Ingredients

  • 1 pre-made pie crust
  • 2 medium zucchinis, sliced
  • 1 small onion, chopped
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup shredded cheese
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp dried herbs

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Sauté onion in olive oil until soft.
  3. Add zucchini and cook until tender.
  4. Season vegetables and let cool.
  5. Whisk eggs and cream together.
  6. Stir in cheese.
  7. Place crust in baking dish.
  8. Add zucchini mixture.
  9. Pour egg mixture on top.
  10. Bake for 35–40 minutes until set.
  11. Cool slightly before serving.

Notes

Sauté zucchini to remove excess moisture. You can substitute cream with milk for a lighter version. Store leftovers in the fridge for up to 3 days and reheat in the oven.
